| Abstract: | ได้ศึกษาปริมาณตะกั่ว แคดเมี่ยม สังกะสี ทองแดง และแมงกานีส ในเนื้อสุกรจำนวน 90 ตัวอย่าง โดยใช้ Atomic Absorption Spectrophotometer พบว่าปริมาณตะกั่วอยู่ระหว่าง 0.1-0.37 ppm. ปริมาณแคดเมี่ยมอยู่ระหว่าง 0-0.16 ppm. ปริมาณสังกะสีอยู่ระหว่าง 16.48-42.53 ppm. ปริมาณทองแดงอยู่ระหว่าง 1.05-7.24 ppm. และปริมาณแมงกานิสอยู่ระหว่าง 0.18-0.76 ppm. มีการสะสมของตะกั่ว แคดเมี่ยม สังกะสี และทองแดงในเนื้อสุกรเหล่านี้ เมื่อเปรียบเทียบกับค่ามาตรฐานและค่าปกติของโลหะหนักเหล่านี้ในเนื้อสุกร โลหะหนักเหล่านี้ส่วนใหญ่ไม่สูงพอที่จะทำให้เกิดอันตรายแก่ผู้บริโภค แต่ปริมาณตะกั่ว และแคดเมี่ยมอาจะมีผลทำให้เกิดการสะสมภายในร่างกายคนและสัตว์เมื่อได้รับเป็นเวลานาน |
| Other Abstract: | The determination of some heavy metals i.e. lead , cadmium zinc, copper and manganese in 90 samples of lean pork by atomic absorption has been studied. It was found that he lead contents were in the range of 0.1-0.37 ppm., cadmium contents were in the range of 0-0.16 ppm., zince contents were in the range of 16.48-42.53 ppm., the copper contents were in the range of 1.05-7.24 ppm., and the manganese contents were in the range of 0.18-0.76 ppm. There were accumulations of lead, cadmium, zinc and copper in these pork but they were not harmful to consumers. However, it couldn’t be concluded that lead and cadmium accumulations were really safe because there are still some other factors which should be taken into consideration. |
